Salmon Bowl

The easiest way to cook salmon! This bowl is a great source of protein, fiber, and good fats for a delicious and balanced meal.

Ingredients:

  • 1 salmon filet (skin removed, cut into bite sized pieces)

  • Sauce of your choice (I prefer Kinder’s Japanese BBQ Marinade, can also use teriyaki)

  • 1 mini cucumber (I prefer Persian), sliced

  • Shredded carrots

  • Jasmine rice, cooked

  • Edamame

  • 1/4 avocado, sliced or diced

  • Spicy mayo

  • Sesame seeds (optional)

Directions:

  1. Remove skin from salmon and cut into bite sized pieces. Put the pieces in a bowl and cover with sauce. Just enough to get all the pieces saucy.

  2. Cook salmon in the air fryer on 380 degrees F for 6-8 minutes (or until it reaches an internal temp of 145 F).

  3. Heat edamame according to package directions.

  4. While the salmon is cooking, prepare the rice and cut the cucumber (I use the TJ's frozen rice bags, if not using instant rice maybe start this first).

  5. Assemble: Put rice at the bottom of the bowl, place salmon bites over rice in one section of the bowl, do the same with the edamame, cucumbers, carrots, and avocado. Drizzle with spicy mayo and top with a sprinkle of sesame seeds.
